I’ve finished my first Masterclass – Gabriela Cámara Teaches Mexican Cooking – and today was my first attempt at applying some of the skills I learned, namely Salsa Verde Cruda and Adobo Rojo de Chiles (marinade for Tacos al Pastor). This was my first time working with achiote, tomatillos, and several varieties of chilies, and I’m excited about how much this is developing my palate. It smells amazing in my kitchen today!





UPDATE: I used these two salsas to make Tacos al Pastor. It was a fantastic success!

I love me some salsa verde. Our favorite restaurant makes some really good salsa but it’s TOO HOT! I need salsa gringo these days.
