My husband has been incredibly understanding during the last four months of my health problems. However, just because my diet is currently extremely limited doesn’t mean he doesn’t need to eat regularly (and preferably healthier than the drive-thru meals he’s been subsisting on).
I was also determined to thank him for being so darn supportive. One of his all-time favorite foods is Seven Layer Dip, so I decided to make him an entire week of Taco Dip for his work dinners. He was thrilled at the yumminess, and I was pretty stoked at how easily this came together.
Basically, instead of layering your ingredients, you fold most of them together in a single saucepan, creating one of the tastiest, protein-packed dips you’ve ever eaten. Top it with the few remaining ingredients, and BOOM. Trust me; try it. It’s delicious! And it’s easily portable, as well.
Easy Taco Dip
1 lb taco seasoned beef, or the ground protein of your choice
2 cups refried beans (I use non-fat)
1/2 cup sour cream (I use reduced fat)
1/2 cup salsa of your choice (use jarred to make it even easier)
1 cup shredded sharp cheddar cheese
1 tomato, diced
1 cup green onions, diced
Combine beef, beans, sour cream, and salsa in a sauce pan and heat through until simmering. Put into your serving dish(es). Top with cheese, tomatoes, and green onions. Serve with tortilla chips.
