GI restrictions are not going to keep me from hosting our family Easter dinner and creating festive treats for my loved ones! So I spent a good part of today in my kitchen, working with chocolate coating and shaped marshmallows for the first time. Since I’m no expert and I didn’t make many changes, I’m simply going to link the recipes I followed.
I’m looking forward to offering my family homemade Easter goodies to take home with them this weekend!
Rice Krispies Treats with Cadbury Mini Eggs

Confession: I’m not a huge fan of Peeps, but I enjoy plain marshmallows. If you don’t have the time or energy, this is a great alternative to using premade marshmallows instead of starting from scratch. However, be prepared for a very large mess!
Chocolate-Enrobed S’mores Cookies
I came up with the idea for this one myself. I had intended to use all the different marshmallows shapes I’d already cut out, but the size of my graham crackers limited me to just the egg shape for these cookies. I used the tips in this recipe to make sure I melted the finicky chocolate correctly: Add A Pinch.
